Ingredients
- 1 whole chicken, about 3 1/2 lb
- 2 inches ginger, sliced
- 4 scallions
- 2 cups jasmine rice
- 2 tbsp chicken fat or oil
- 3 garlic cloves, minced
- 2 cups reserved chicken broth
- 1 cucumber, sliced
- Salt
Instructions
- Rub chicken with salt, rinse, and lower into a pot with ginger and scallions. Cover with water and poach at a bare simmer for 35 minutes.
- Transfer chicken to ice water for 5 minutes, then drain. Reserve broth.
- Fry rice in chicken fat with garlic for 2 minutes. Add broth and cook until tender.
- Slice chicken and serve over rice with cucumber, broth, and chile sauce.
