Ingredients
- 12 oz wheat noodles
- 8 oz ground pork
- 2 tbsp ya cai preserved mustard greens
- 2 tbsp sesame paste
- 2 tbsp light soy sauce
- 2 tbsp Chinkiang vinegar
- 2 tbsp chili oil
- 1 tsp Sichuan pepper
- 2 cloves garlic, grated
- 2 scallions, sliced
Instructions
- Mix sesame paste, soy sauce, vinegar, chili oil, pepper, and garlic in four serving bowls.
- Brown pork in a hot skillet, add ya cai, and fry until fragrant.
- Boil noodles until just tender, reserving 1/2 cup cooking water.
- Loosen each sauce with hot noodle water, add noodles, and top with pork and scallions.
