Ingredients
- 2 cups Japanese short-grain rice
- 2 cups mixed shiitake and shimeji mushrooms
- 1 small carrot, julienned
- 2 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp sake
- 2 cups dashi
- 1 tsp grated ginger
- 2 scallions, sliced
Instructions
- Rinse rice until the water is nearly clear, then drain for 15 minutes.
- Add rice, dashi, soy sauce, mirin, sake, and ginger to a rice cooker or heavy pot.
- Scatter mushrooms and carrot over the rice without stirring.
- Cook until tender, rest covered for 10 minutes, fluff gently, and garnish with scallions.
